Kale Salad of the Gods

It is HOT out today and in this kind of weather, all I want to eat is salad. So here is a little recipe that will keep you all cool as cucumbers.

I never really liked kale until I tried this salad. If you want to start eating healthy, there is almost nothing more packed full of nutrients than kale. It is one of the healthiest greens out there! If you have kids and you can't get them to eat their salad, try giving them this. I've had people say that their kids love it. If you are going to a pot luck and you bring this salad- it will be the hit of the event. This salad is so sought after that I feel a bit reluctant to share it with the world but since I do love you, my loyal reader, I will share it... just this once.


You will need:

1 large red onion
1 bundle of kale (regular kale will do but it is best with Dinosaur kale if you can find it... also called Tuscan kale).
Sunflower sprouts
Raw Sunflower seeds
Raw Pepitas (pumpkin seeds)
1/4 Braggs liquid aminos
1/4 cup olive oil
1/4 cup fresh lemon juice

Serves 4-6 people or 2 really greedy people.

In a large measuring cup add the brags, lemon juice and olive oil together and mix. Now slice the onion into half moon shapes and add it to the mixture. At this point you want to try to submerge your onions into the dressing as much as you can. You can add more Braggs, olive oil and lemon juice in equal amounts if it is not enough to mostly cover your onions. The onions will absorb some of the dressing and will also soften and shrink down, so you don't have to drown them, but be sure to turn them over so they get doused evenly.
Let the onions soak for at least 20 minutes. The longer they soak the better they will taste. Sometimes, I even let them soak overnight but if you don't have a lot of time 20 minutes will do.


While your onions soak, wash your kale thoroughly, let dry then, chop and place in a large bowl.When your onions are ready dump the dressing and onions on the kale and toss well. Throw in the sunflower sprouts, seeds and pepitas and you are done! I usually wait 10-20 mins before serving to give the kale a little time to soften up. Kale can be very tough (especially if you could not find the Dinosaur variety) so unless you like that texture, it is important to let the kale soak in the dressing as well. Enjoy!
